What to Eat Instead of Bread

3 min reading time

Bread is often the main source of carbohydrates at meals, but there are many nutritious and delicious alternatives.

The choice depends on whether you want to reduce your carb intake, improve your digestion, increase your vegetable intake, or simply diversify your menu.

  1. Vegetable substitutions (for more fiber and fewer calories)

Vegetables are a great base for wrapped “meals” because they provide crunch and freshness, while supporting digestion and not causing blood sugar fluctuations.

  • Lettuce or Chinese cabbage leaves: Large, firm leaves (such as romaine lettuce) are perfect as “tortillas” or rolls. Fill them with tuna, egg spread, or chicken.
  • Sliced sweet peppers: Halved or thickly sliced, red or yellow peppers make a crunchy base for cheese or vegetable spreads (plus, they’re high in vitamin C).
  • Baked sweet potato slices: Cut sweet potatoes into 1cm thick slices and bake them in the oven or toaster. This will make a warm, crispy base for avocado, egg or peanut butter.
  • Zucchini or eggplant rings: Pan-fried, they make a great base for mini “sandwiches”.

  1. Whole grains and pseudo-grains (for sustained energy)

If you want to avoid wheat and processed white bread but still need filling carbohydrates:

  • Oats and oatmeal: Instead of a sandwich, you can make savory oatmeal (with a fried egg, spinach and seeds) or oat pancakes.
  • Quinoa and buckwheat: Cook a large amount of buckwheat or quinoa porridge and use it as a side dish instead of slices of bread with main meals.
  • Buckwheat or rice galettes: A convenient and quick solution. Choose whole grain versions without added salt or sugar.

  1. Homemade flourless alternatives (Keto / Low-Carb)

If you miss the shape and texture of bread, you can make simple substitutions yourself:

  • Cloud Bread: Made with beaten egg whites and cream cheese or Greek yogurt. They are extremely light and carbohydrate-free.
  • Seed bread and crackers: Mix chia seeds, flax seeds, sunflower and pumpkin seeds with water and a little salt, roll out on baking paper and bake. You will get crispy crackers, rich in fiber and healthy fats.
  • Egg and banana or protein pancakes: A quick alternative for sweet breakfasts.
