Strengthening nettle soup
Nettles are a real treasure in the kitchen and home pharmacy.
š² Strengthening nettle soup (instead of spinach)
This soup is full of minerals and has a delicate, creamy taste. It is ideal for spring detoxification or an energy boost.
Ingredients:
⢠4 handfuls of young nettle tops (picked in a clean place)
⢠2 large potatoes (diced)
⢠1 onion and 2 cloves of garlic
⢠1 liter of vegetable soup base (or water)
⢠Olive oil or butter
⢠Salt, pepper, nutmeg
⢠Optional: A spoonful of sour cream for the finishing touch.
Procedure:
Preparation of nettles: Pour boiling water over the nettles for 1 minute (to stop burning), drain and roughly chop.
Roasting: Fry the chopped onion in oil, add the garlic (just until fragrant) and the potato cubes.
Cooking: Pour in the stock and cook until the potatoes are soft (about 15 minutes).
Finishing: Add the blanched nettles and cook for another 2-3 minutes. Blend everything together with a hand blender until creamy.
Add salt, pepper and a pinch of nutmeg. Serve with a spoonful of sour cream.
