👌 Lentil stew is filling, healthy and very easy to prepare.

🍲 Lentil stew

🧾 Ingredients (for 4 people):

• 200 g lentils (brown or green)

• 1 onion

• 2 carrots

• 2 potatoes

• 2 cloves of garlic

• 1 can of chopped tomatoes (or 2 fresh)

• 1 l of soup stock (or water)

• 2 tablespoons of olive oil

• 1 bay leaf

• 1 teaspoon of sweet paprika

• salt, pepper

• (optional) parsley

 

👨‍🍳 Procedure:

Preparing the lentils: Rinse the lentils under cold water (no need to soak them.)

Fry the chopped onion in oil (3–5 min). Add the garlic and fry briefly.

Vegetables: Add the chopped carrots and potatoes. Fry for another 2–3 minutes.

Cooking: Add lentils, tomatoes, bay leaf and paprika. Pour in the stock. Cook for 25–30 minutes until the lentils are tender.

Finish: Season with salt and pepper. Sprinkle with parsley if desired.

 

💡 Tips:

• For a richer taste, add sausage or bacon 🥓

• For a vegan version, use vegetable stock 🌱

• For a thicker stew, puree some of the lentils

 

Quick variation:

• Add spinach or Swiss chard at the end of cooking

• A little vinegar or lemon at the end a fresher taste
