Rice with Vegetables (Vegan)

Rice with vegetables, or “rizi bizi”, is a popular dish that can be light or rich, depending on the choice of rice and vegetables.

 

Preparation:

Rinse 1 cup of rice (basmati, jasmine or brown rice) thoroughly.

For white rice, cook it in 2 cups of water or broth according to the instructions on the package (usually 15-20 minutes).

For brown rice, more liquid (about 2.5 cups) and a longer cooking time (about 30-40 minutes). Salt the water while cooking.

Heat 1-2 tablespoons of olive oil in a large frying pan or wok.

 

Sauté the vegetables of your choice

  • Onion and garlic: For the base.
  • Carrots, peas, corn: A classic combination for rice.
  • Bell peppers, zucchini, broccoli: Cut into small pieces.
  • Mushrooms: Cut into slivers.
  • Spices: Salt, pepper, turmeric (for color), a little soy sauce (for an Asian touch).

 

Add the cooked rice to the roasted vegetables in the pan. Stir to distribute all the ingredients evenly.

Fry for a few more minutes to let the flavors combine. At the end, you can add a little butter and chopped fresh parsley.
