How to use up a lot of leftovers after Easter

After Easter, there is usually a lot of food left over – ham, eggs, walnut strudel, horseradish, bread… Instead of letting it sit for too long or even throwing it away, you can use it in a super creative way in new dishes!

 

How to use leftovers usefully and deliciously:

 

🥚 Eggs

Ideas:

• Egg spread: Chopped hard-boiled eggs with mayonnaise, mustard, garlic or chives – great for bread!

• Salads: Add chopped eggs to mixed salads or potato salad.

• Stuffed eggs: Cut in half, mix the yolk with tuna, mayonnaise or avocado, fill and decorate.

 

🐷 Ham

Ideas:

• Quiche or frittata: Ham, eggs, cheese and vegetables in the oven – a warm breakfast or dinner.

• Sandwiches or toast: Add cheese, a little mustard, arugula or pickles.

• Pasta or risotto: Ham cubes in a cream sauce or with mushrooms.

 

🍞 Walnut strudel

Ideas:

• French toast: Slices of walnut strudel soaked in milk and egg, fried in a pan – a sweet breakfast!

• Sweet pudding: Walnut strudel as a base for baked bread pudding with vanilla cream or fruit.

 

🌱 Horseradish

Ideas:

• Horseradish sauce: Mix with sour cream, mayonnaise or Greek yogurt – great with meat.

• Spicy spread: Add it to cheese or meat spread for a little hot flavor.

 

🥖 Leftover bread

Ideas:

• Bread dumplings or narastek: With egg, milk and spices.

• Homemade croutons or breadcrumbs: Toast in the oven and use for soups or salads.
