Barley Salad

super easy

🌿 Barley is filling, full of fiber and gives a nice texture to the salad. Here is the basic recipe, plus some ideas for variations:

🥗 Basic Barley Salad

Ingredients (serves 4)

• 200 g pearl barley

• 500 ml vegetable stock or water

• 1 red pepper (diced)

• 1 cucumber (diced)

• 200 g cherry tomatoes (halved)

• ½ red onion (finely chopped)

• 1 handful parsley (chopped)

• 3 tablespoons olive oil

• Juice of 1 lemon

• Salt and freshly ground pepper

 

Preparation

Rinse the barley and cook in salted water or stock (about 25-30 minutes until tender but still slightly firm). Drain, rinse with cold water to cool, and let drain. Chop the vegetables and place in a large bowl. Add the barley and parsley.

Drizzle with olive oil, lemon juice, salt and pepper. Mix well and serve chilled or at room temperature.

 

🌟 Variations

• Mediterranean: add feta, olives and sun-dried tomatoes.

• Oriental: season with mint, coriander, add pomegranate and a little cumin.

• With roasted vegetables: zucchini, eggplant, peppers, onions – roasted in the oven and then mixed with the barley.

• Protein: add cooked chickpeas, tuna, grilled chicken or fried tofu.
