Allium ursinum is a perennial plant that grows from a small bulb. Its leaves are lanceolate, shiny green and grow directly from the ground on long stalks. Later in spring, it develops panicle inflorescences with small, white star-shaped flowers.

• Smell: The most reliable characteristic is the strong, pungent garlic smell that is released when the leaf is crushed between the fingers.
• Season: It is harvested in early spring, usually from March to May, before the plant blooms (after flowering, the leaves become more bitter and less medicinal).
• Edibility: The entire plant is edible – young leaves, flower buds, flowers and bulbs.
WARNING: Danger of confusion!
The Allium ursinum has some extremely poisonous counterparts that grow in similar habitats: autumn crocus, lily of the valley and white čemaž.
• The Allium ursinum ONLY smells like garlic. If you are not sure about the smell, DO NOT harvest the plants.
• The Allium ursinumleaves grow singly on a stalk from the ground, while the leaves of the čemaž and lily of the valley grow in bunches or hug the stem.

In folk medicine, the čemaž is considered a “body cleanser”. In terms of medicinal properties, it often surpasses its cultivated relative, garlic. Its benefits come mainly from its rich content of sulfur compounds (e.g. allicin), essential oils, vitamins (especially vitamin C) and minerals.
