Avocado Spread
Avocado Spread with Boiled Eggs
This is a great idea for a nutritious, creamy and delicious spread that is perfect for breakfast or a snack. The combination of healthy fats from avocado and protein from eggs will keep you full for a long time.
Ingredients:
· 2 ripe avocados
· 4 hard-boiled eggs
· 1/4 cup red onion, finely chopped (optional)
· 1 tablespoon fresh lemon juice
· 1/2 teaspoon salt (or to taste)
· ground pepper (to taste)
· 4 tablespoons sour cream
· 2 tablespoons horseradish
· 1 tablespoon olive oil
· fresh parsley or chives for garnish (optional)
Preparation instructions:
Hard-boil the eggs, cool them, peel them. Cut the avocado in half, remove the pit and scoop out the flesh with a spoon.
Place all ingredients in a food processor and mix well. The lemon juice not only adds flavor, but also prevents the avocado from browning.
This spread is great on whole grain bread, toast, or crackers. It can also be served as a side dish with fresh vegetables (e.g. carrots, peppers, or cucumbers).
You can garnish it with fresh chopped parsley or chives before serving.
If you are not going to eat the spread right away, store it in the refrigerator. Best in a glass jar.
