Zucchini patties
The patties are golden brown, with a crispy crust that reveals a juicy interior made from freshly grated zucchini. The plate is also topped with fresh herbs like parsley or chives, and perhaps a few sliced tomatoes or lemon slices for decoration.
Ingredients:
· 2 medium zucchini (grated)
· 1 small onion (finely chopped)
· 1 clove garlic (finely chopped)
· 1 egg
· 50 g grated Parmesan (or other hard cheese)
· 100 g breadcrumbs
· 2 tablespoons flour
· 2 tablespoons fresh chopped parsley (optional)
· salt and pepper to taste
· frying oil (sunflower, olive or other oil of your choice)
Salt the grated zucchini and let it stand for 10-15 minutes to remove excess water. Then squeeze it well to remove as much liquid as possible.
In a large bowl, mix the squeezed zucchini, chopped onion, garlic, egg, grated Parmesan, breadcrumbs, flour and parsley. Add salt and pepper to taste. Mix well to obtain a uniform mixture. If the mixture is too liquid, add a little more flour or breadcrumbs. Form the mixture into small patties (about 5 cm in diameter).
Heat a little oil in a frying pan over medium heat. Fry the patties on both sides until golden brown and crispy (about 3-4 minutes per side). Place the patties on paper towels to drain excess oil. Then serve them warm, with a side dish of your choice, such as fresh salad, yogurt sauce or bread.
