Potato Salad with Onions and Bacon

 

Ingredients (for 4 people)

• 1 kg potatoes

• 150 g smoked bacon

• 1 large onion

• 1 dl wine vinegar

• 1 dl water or broth

• 4 tablespoons oil

• salt to taste

• freshly ground black pepper

• 1 tablespoon chopped parsley, spices to taste

 

Preparation

Wash the potatoes well and boil them in their skins. When cooked, cool slightly, peel and cut into thin slices.

Cut the bacon into small cubes and fry it slowly in a pan until golden brown and crispy.

Cut the onion into thin slices or chop finely. Add it to the bacon and fry for a few minutes until translucent.

Pour the vinegar, water or broth into the bacon and onion and add a little salt and pepper. Heat briefly to combine the flavors.

Place the warm potatoes in a large bowl and pour over the warm dressing. Gently stir to absorb the liquid.

If desired, add chopped parsley and let stand for about 10 minutes before serving.

 

Tip for best taste

The potatoes should still be warm when you pour over the dressing.

The most suitable varieties are firm salad potatoes.

Use homemade smoked bacon for a richer flavor.

The salad is great as a side dish with roasts, grilled meats or grilled dishes.
