1. Salad with avocado, cherry tomatoes and mozzarella

• Slice avocado, tomatoes and mozzarella.

• Add a few leaves of arugula or spinach.

• Drizzle with olive oil, lemon juice, salt and pepper.

 

2. Cold pasta salad

• Cook whole wheat pasta and cool.

• Add chopped peppers, cucumbers, olives, feta cheese and fresh herbs.

• Use yogurt with lemon and garlic for the dressing.

 

3. Wrap with chicken and vegetables

• Place roasted chicken, avocado, arugula and corn on a tortilla.

• Wrap and add a little yogurt sauce or pesto if desired.

 

4. Gazpacho (cold tomato soup)

• Blend tomatoes, cucumbers, peppers, garlic, onion and olive oil in a blender.

• Serve with a few pieces of bread or toasted bread.

 

5. Chickpea and Corn Salad

• Mix cooked chickpeas, corn, red onion, parsley and lime juice.

• Add a little olive oil, salt and pepper to taste.

 

6. Grilled Fish Fillet with Rocket and Tomato Salad

• Grill or pan-fry fish fillets (e.g. trout or sea bass).

• Serve with fresh rocket, cherry tomatoes and lemon dressing.
