Sataraš with eggs and vegetables
🥘 Sataraš with egg is a classic dish – a simple, healthy and filling meal, full of vegetables and protein.
🍳 Sataraš with egg
Ingredients (for 2–3 people)
• 2 tablespoons olive oil
• 1 large onion (chopped)
• 2 cloves garlic (chopped)
• 1 red pepper (sliced or diced)
• 1 green pepper (sliced or diced)
• 2 tomatoes (peeled and chopped) or 200 g of peeled tomatoes
• 2 eggs
• salt, pepper, sugar to taste
• fresh parsley for sprinkling
Preparation
Onion and garlic: heat the oil in a pan, add the onion and garlic and fry for 3–4 minutes until soft.
Pepper: add the red and green peppers, fry for 5–7 minutes until slightly softened.
Tomatoes: add chopped tomatoes or peeled tomatoes, salt, pepper and a little sugar (if the tomatoes are sour), cook for 10-12 minutes to create a slightly thick sauce.
Eggs: make two wells in the center of the pan and crack the eggs into them. Cover and cook for 3-5 minutes, until the whites are set and the yolks are runny if desired.
Serving: sprinkle with fresh parsley and serve with bread or wholemeal noodles.
🌟 Combination
• With cheese: add grated cheese (e.g. feta or cheese substitute for a vegan version) just before serving.
• With other vegetables: add zucchini, eggplant or spinach for a richer flavor.
• For a vegan version: use tofu scramble instead of eggs.
• With spices: paprika, oregano, thyme or chili for a spicy touch.
