Dandelion Smoothie

A dandelion (Taraxacum officinale) smoothie can be a fantastic way to enjoy the benefits of this nutritious, natural herb. Dandelions are known for their detoxifying properties, and they are rich in vitamins A, C, and K, as well as minerals like iron, calcium, and potassium.

Dandelion Smoothie:

Ingredients:

  • 1 cup fresh dandelion greens (make sure they are from a pesticide-free area)
  • 1/2 cup frozen pineapple chunks (for sweetness and a tropical flavor)
  • 1/2 banana (adds creaminess and extra potassium)
  • 1/2 cup coconut water (or regular water or almond milk)
  • 1/4 cup plain yogurt or a non-dairy alternative (for creaminess)
  • 1 tsp honey or maple syrup (optional, depending on your sweetness preference)
  • ice cubes (optional, for a cooler, thicker texture)
  • a squeeze of lemon juice (optional, for extra freshness)

 

Instructions:

Wash the dandelion leaves thoroughly, as they can have dirt or residue on them. Trim off any tough stems.  Add the dandelion greens, pineapple, banana, coconut water, yogurt, and honey (if using) into a blender.

 If you’d like a thicker smoothie, add more frozen fruit or ice cubes. For a thinner consistency, add more coconut water or almond milk. Blend until everything is well combined and the texture is smooth.

Taste your smoothie and add more honey or lemon juice as needed.

Pour into a glass and enjoy!
