🥣 Homemade vegetable minestrone

🥕 Ingredients (for 4–6 people):

• 2 tablespoons olive oil

• 1 onion (sliced)

• 2 cloves garlic (chopped)

• 2 carrots

• 2 potatoes

• 1 stalk celery

• 1 zucchini

• 1 small kohlrabi or piece of cabbage (optional)

• 1 can of tomatoes (peeled or pureed)

• 1 can of white beans or cooked beans (~250 g)

• 1 bay leaf

• Salt, pepper, dried thyme or rosemary

• Water or vegetable broth (~1.5 l)

• Pasta (small, e.g. rice noodles) or spaghetti (optional)

• Fresh parsley

👩‍🍳 Preparation:

Fry the onion in oil, add the garlic and a little salt until softened. Add chopped carrots, celery, potatoes and other vegetables of your choice.

After a few minutes, stir in the tomatoes and pour in water or stock. Add the bay leaf, herbs, spices and let it simmer gently for 30 minutes.

Add the beans and, if desired, pasta or vermicelli (cook for an additional 10–15 minutes). Taste, season to taste, add fresh parsley and serve.

📝 Tips:

• For a thicker minestrone: mash some of the vegetables with a fork or hand blender.

• For a richer taste: add a ham bone, pancetta or homemade sausage (before cooking the vegetables).

• For a vegan version: omit the meat, use vegetable stock.

• Also great the next day – even better when it has “soaked”.
