Green Bean Salad
🥗 Green beans make a great base for a salad – they’re crunchy, light, yet filling.
🌿 Basic Green Bean Salad
Ingredients (serves 4)
• 400g green beans (green or yellow)
• 200g cherry tomatoes (halved)
• ½ red onion (thinly sliced)
• 2 tablespoons olive oil
• Juice of ½ lemon (or 1 tablespoon balsamic vinegar)
• Salt and freshly ground pepper
• 1 handful fresh parsley
Preparation
Clean the green beans and cut them into 3–4 cm long pieces. Blanch them in salted water, then quickly rinse in ice water to keep them crunchy and green.
Mix the beans, tomatoes and onion in a bowl. Drizzle with olive oil, lemon juice, salt and pepper.
Sprinkle with parsley and serve.
🌟 Variations
• With potatoes: add diced boiled potatoes (a great summer side dish).
• Mediterranean: green beans + olives + feta + tomato + oregano.
• Protein: add boiled egg, tuna or grilled chicken.
• Nutty: sprinkle with almonds, walnuts or pine nuts for crunch.
• Warm version: after blanching, quickly fry the beans in olive oil with garlic, then pour over the dressing.
