Wheat Salad with Mixed Vegetables

 

Ingredients (serves 4)

• 250 g wheat grains

• 1 red pepper

• 1 yellow pepper

• 1 cucumber

• 1 medium carrot

• 2 tomatoes

• 1 small red onion

• 100 g corn (cooked)

• handful of fresh parsley

• 2 tablespoons olive or pumpkin oil

• 1 tablespoon lemon juice

• salt to taste

• pepper to taste

 

Preparation

Wash the wheat grains and soak them for a few hours or overnight.

Cook them in salted water for about 40–50 minutes or until soft. Drain and cool.

Cut the pepper, cucumber, carrot, tomato and onion into small cubes.

Finely chop the parsley.

In a large bowl, mix the cooled wheat, vegetables and corn.

Add olive or pumpkin seed oil, lemon juice, salt and pepper.

Mix everything well and let stand for 15–20 minutes to let the flavors combine.

 

Tip

You can enrich the salad with:

• feta cheese,

• toasted pumpkin or sunflower seeds,

• chickpeas,

• olives,

• fresh mint or basil.

You can serve it as a light lunch on its own or as a side dish to meat, fish or grilled dishes. 🍽️
