Chocolate boom with sour cherries

Cookie Dough:

  • 250 g of butter
  • 100 g of sugar
  • 500 g ground biscuits

Chocolate cream:

  • 200 g of dark chocolate
  • 200 ml of whipping cream
  • 50 g of butter
  • sour cherries (quantity as desired)

Chocolate glaze:

  • 100 g of dark chocolate
  • 50 ml of cream

 

Mix the ground biscuits together with the melted butter and mix well. If the mass is too wet, add a little more ground biscuits. If it is too dry, add a little sweet cream to get a nice smooth mass.

Line the inside of the perimeter with acetate foil, or you can also use transparent foil. Spread the prepared cookie dough evenly on the bottom of the rim and around it.

Put chocolate cream with sour cherries on top of the cookie mass. Slowly heat the cream in a saucepan over low heat and add the chocolate to the hot cream. Stir slowly until the chocolate melts. For a lasting cream, we need to cool the ganache (I make it the day before). The next day, mix the cream well with an electric mixer to get a nice chocolate cream. Add sour cherries to the cream and spread the cream over the cookie dough.

Cover with chocolate glaze and sprinkle with ground walnuts.
