Croissants with sweet cottage cheese are a wonderful treat that you can prepare as a sweet breakfast, snack or dessert. Soft and light croissants are filled with creamy sweet curd, which gives them a rich taste and pleasant texture. These sweet curd croissants are perfect for any occasion.
Ingredients for the dough:
- 500 g of flour
- 25 g of fresh yeast or 7 g of dry yeast
- 200 ml of warm milk
- 100 g of sugar
- 1 egg
- 100 g of butter (melted)
- a pinch of salt
- 1 teaspoon of vanilla sugar (optional)
- lemon peel (optional)
Ingredients for the filling:
- 250 g of cottage cheese
- 1 egg
- 50 g of sugar (to taste)
- 1 teaspoon of vanilla sugar
- 1 tablespoon of sour cream (for creaminess)
- lemon peel
- raisins
If you are using fresh yeast, crumble it into warm milk, add 1 teaspoon of sugar and let it sit for 10-15 minutes to activate the yeast. If you use dry yeast, mix it with flour.
Mix the flour, salt, vanilla sugar and lemon zest in a large bowl. Add activated yeast (or dry yeast), remaining sugar, egg and melted butter. Mix all the ingredients and knead until you get a smooth and elastic dough.
Cover the dough with a tea towel and let it rise in a warm place until it doubles in size (about 1 hour).
While the dough is rising, prepare the filling. In a bowl, mix cottage cheese, egg, sugar, vanilla sugar, lemon peel and, if desired, sour cream. If desired, you can also add raisins.
Roll out the risen dough on a lightly floured surface into a large circle, about 0.5 cm thick. Cut the circle into 8-12 equal triangles.
Place a spoonful of curd filling on the wider part of each triangle. Then fold the triangle towards the narrower end to form a croissant. Place the croissants on a baking sheet lined with baking paper and let them rise for another 15-20 minutes.
Heat the oven to 180 °C. Before baking, you can brush the croissants with a beaten egg to make them golden brown. Bake the croissants for about 20-25 minutes or until golden brown.
If desired, you can sprinkle them with powdered sugar.
