Tomato paste

Tomato paste is often used in various dishes. It is made from ripe tomatoes that are cooked and blended into a smooth consistency. The sauce can be seasoned with salt, herbs and other spices depending on the desired flavor profile.

Ingredients:

  • 1 kg of ripe tomatoes
  • 1-2 cloves of garlic
  • 1 onion, finely chopped
  • olive oil
  • salt
  • fresh basil or other herbs (optional)

 

Wash the tomatoes and cut an “X” in the bottom of each one. Boil them in hot water for about 1 minute, then put them in cold water. Peel the tomatoes and roughly chop them. Heat some olive oil in a large pot. Add chopped onion, garlic and fry until soft.

Add sliced ​​tomatoes to the pot and simmer over moderate heat. Stir occasionally and let cook for about 20-30 minutes until they break down into a sauce. Add salt to taste and herbs of your choice. For a smoother consistency, blend the sauce with a stick blender or leave it chunky, depending on your preferences.

Tomato pulp can be used in pasta dishes, as a base for pizza or even as a base for soups and stews.
