Wild garlic soup
Wild garlic soup is a delicious and healthy dish that you can prepare in the spring, when the wild garlic grows.
Wild garlic is known for its distinctive garlic flavor and numerous health benefits.
Ingredients:
– 200 g wild garlic (fresh, young)
– 2 potatoes (medium size)
– 1 onion
– 2 cloves of garlic
– 1 liter of vegetable or chicken broth (or water)
– 1 tablespoon of olive oil
– Salt and pepper to taste
– tablespoon of cream (optional, for serving)
– fresh bread (for serving, if desired)
Instructions:
Wash the wild garlic and tear the leaves into smaller pieces. Remove any tough stems.
Heat the olive oil in a pot over medium heat. Add the chopped onion and garlic. Fry until the onion becomes translucent.
Peel and dice the potatoes. Add them to the pot and fry them with the onion and garlic for a few more minutes.
Pour in the vegetable or chicken broth (or water) and bring to a boil. Reduce the heat and simmer for about 15 minutes or until the potatoes are tender.
Once the potatoes are cooked, add the torn chervil leaves to the pot and cook for another 5 minutes, until the chervil is tender.
You can blend the soup with a hand blender or pour it into a blender to get a smooth creamy texture. If necessary, you can add a little more broth or water to reach the desired consistency.
Season the soup to taste with salt and pepper. If desired, you can add a tablespoon of cream for a creamier texture.
Serve the soup warm, garnished with fresh chervil and a tablespoon of cream. Serve with a slice of fresh bread.
