Carrot Soup with Ginger and Orange
Ingredients:
• 5 carrots
• 1 onion
• 1 teaspoon grated fresh ginger
• Juice of 1 orange
• Water or vegetable stock
• Salt, pepper, olive oil
Preparation:
Briefly fry the onion and ginger, add the carrots. Add the liquid and cook until soft. Blend, add the orange juice, serve lukewarm or cold.
