Vegetable bowl with avocado

Ingredients:

• 1/2 cup quinoa or brown rice (cooked)

• 1 handful spinach or arugula

• 1 avocado (sliced)

• 1 red pepper (sliced into strips)

• 1 handful cooked chickpeas

• 1 tablespoon olive oil

• juice of half a lemon

• 1/2 teaspoon ground cumin

Preparation:

Arrange the quinoa, spinach, avocado, peppers, and chickpeas on a plate. Drizzle with olive oil, lemon juice, and sprinkle with cumin. Serve as a nutritious meal for lunch or dinner.
