Chicken meat with millet porridge

Chicken with millet porridge is a nutritious and tasty meal that combines high protein meat and healthy grains.
Ingredients for 2 people:
For the chicken:
- 300 g of chicken fillet (thighs or white meat)
- 1-2 tablespoons of olive oil
- salt, pepper, paprika, garlic powder (or fresh)
- a little lemon juice (optional)
For millet porridge:
- 150 g of millet (millet porridge)
- 1 small red onion
- 1 carrot
- 1 tablespoon of olive oil
- 300-350 ml of water or chicken broth
- salt and pepper to taste
- fresh parsley or other herbs (optional)
Before starting, rinse the millet under cold water to remove the bitterness.
Cut the red onion and carrot into small cubes. Heat the olive oil in a pan, then fry the onion and carrot until soft, about 5 minutes.
Add millet to the pan with vegetables and fry it briefly (1-2 minutes), then add water or soup. Salt and pepper to taste.
Reduce the temperature and cover the pan. Cook on low heat for 15-20 minutes, or until the millet absorbs all the liquid and becomes soft. At the end, you can add fresh parsley for extra flavor.
Season the fillets with salt, pepper, paprika and garlic powder. For freshness, you can sprinkle them with a little lemon juice.
Heat the olive oil in a pan, then fry the chicken fillets for 4-5 minutes on each side until golden brown and cooked from the inside. You can also bake the chicken in the oven at 180°C for about 20-25 minutes.
Serve the chicken with millet porridge with vegetables. If desired, add a salad or a little sour cream.
