Paprika and mustard spread

Paprika and mustard spread is a spicy and tasty dish that is perfect for spreading on bread, crackers or as an addition to meat dishes.

 

Ingredients:

  • 5 kg of red peppers
  • 1 glass of mustard
  • 500 g of sliced ​​onion
  • 100 g of chopped garlic
  • Olive oil
  • Salt, vinegar for pickling
  • Mixture of spices (optional)

Blanching mixture:

  • 1.5 l of water
  • 4 tablespoons of olive oil
  • 100 ml of vinegar for pickling
  • 20 g of salt

 

Wash and clean the peppers. Peel and chop the onion and garlic.

Blanch the peppers quickly (2-3 minutes) in a mixture of water, olive oil, vinegar and salt. Then mix them in a multi-purpose mixer.

Fry chopped onion and garlic in olive oil and add mixed peppers. Add salt and 50 ml of vinegar for pickling and cook over low heat for 30 minutes, stirring constantly.

Then add a glass of mustard and spices. Cook for another 5 minutes, fill the warm jars and pasteurize them.

Advice: when filling the glass with spread, add a spoonful of olive oil on top.
