Chicken Parmentier (Hachis Parmentier with Chicken)

Chicken Parmentier is a French version of shepherd’s pie, in which a layer of juicy chicken filling is covered with creamy mashed potatoes and baked in the oven.

 

Ingredients (serves 4–6)

For the mashed potatoes

• 1 kg potatoes

• 50 g butter

• 100 ml milk

• salt

• nutmeg (optional)

 

For the chicken filling

• 500 g chicken meat (breast or thigh)

• 1 large onion

• 2 carrots

• 2 cloves of garlic

• 2 tablespoons of oil

• 100 ml chicken stock

• 1 tablespoon of tomato puree

• salt

• pepper

• thyme or parsley

 

For the gratin

• 80 g grated cheese (Emmental, Gouda or Parmesan)

• a few pieces of butter

 

Preparation

Peel the potatoes and cut them into pieces. Cook them in salted water until soft. Drain and mash. Add the butter, milk, salt and a little nutmeg if desired.

Cut the chicken into small cubes or coarsely chop it. Fry the chopped onion in oil. Add the carrots and garlic. Fry for a few minutes.

Add the chicken and fry it. Stir in the tomato puree and pour in the stock. Season with salt, pepper and thyme.

Cook for about 10 minutes until the liquid has evaporated a little.

Preheat the oven to 200 °C. Lightly grease a baking tray or ovenproof dish.

Spread the chicken filling on the bottom. Spread the mashed potatoes evenly on top.

Sprinkle with grated cheese and add a few pieces of butter.

Bake for 20–25 minutes until the top is golden brown. For a nice crust, turn on the grill function for the last few minutes.

 

Chef tip

Add a handful of peas or corn for more colour and flavour.

Mix some of the cheese into the mashed potatoes.

You can prepare the dish the day before and just bake it the next day.

It goes great with a green salad.
