Plum dumplings

🍑 Plum dumplings
For about 12 dumplings:
• 500 g potatoes
• 150–180 g plain flour
• 1 egg
• pinch of salt
• 12 small plums
• 12 teaspoons of sugar
• a little cinnamon to taste
For sprinkling:
• 50 g butter
• 100 g breadcrumbs
• 2–3 tablespoons of sugar
• cinnamon to taste
Preparation
Boil the potatoes and mash them well. Leave them to cool for a few minutes.
Add the egg, salt and flour and quickly knead a soft dough. Do not knead for too long – if the dough is very sticky, add a little more flour.
Wash the plums and remove the pits. Put a little sugar and a pinch of cinnamon in each one.
Divide the dough into 12 pieces. Flatten each piece, place a plum in the middle and wrap it tightly with dough. Form a dumpling.
Place the dumplings in boiling salted water. When they float to the surface, cook for about 5 more minutes.
Meanwhile, melt the butter in a pan, add the breadcrumbs and fry until golden. Stir in the sugar and, if desired, cinnamon.
Drain the cooked dumplings and roll them in the fried breadcrumbs.
