Wholemeal Mozzarella, Tomato and Basil Sandwich

🌸 Wholemeal Mozzarella, Tomato and Basil Sandwich

 

Ingredients

• 2 slices wholemeal bread (or wholemeal bun/ciabatta)

• 100–125 g fresh mozzarella (preferably in balls or slices)

• 1–2 ripe tomatoes (sliced)

• Handful of fresh basil leaves

• 1–2 tablespoons basil pesto (optional)

• 1 tablespoon extra virgin olive oil

• 1 teaspoon balsamic vinegar or cream

• Salt and freshly ground black pepper to taste

• Optional: A few slices of red onion or a little rocket.

 

Method

Lightly toast the wholemeal bread slices in a toaster or pan until crispy, if desired. This is optional, but it adds a better texture to the sandwich.

Cut the mozzarella and tomatoes into even slices. Wash and dry the basil leaves.

To assemble the sandwich:

â–Ş Spread one slice of bread with basil pesto (if using).

â–Ş Alternate slices of mozzarella and tomato over the pesto.

â–Ş Place fresh basil leaves over the tomatoes and mozzarella.

â–Ş Add red onion or arugula, if desired.

Drizzle with olive oil and balsamic vinegar. Season with salt and freshly ground pepper.

Top with another slice of bread, also spread with pesto or olive oil, if desired.

Cut the sandwich in half and serve immediately.

 

Tips for a better sandwich

• Quality ingredients: The success of this sandwich depends on the freshness of the ingredients. Use ripe, juicy tomatoes and fresh mozzarella.

• Pesto: Instead of a bunch of fresh basil, you can use just pesto, or both for an even richer flavor.

• Toasted Sandwich: For a warm sandwich with melted mozzarella, assemble and toast in a toaster or pan with a little butter until the bread is golden brown and the cheese is melted.

• Pesto-free: If you don’t have pesto, you can drizzle both slices of bread with olive oil and balsamic vinegar and add more fresh basil.
