Couscous salad

Couscous salad is a light, refreshing and very versatile dish – it can be a side dish, a meal in itself or a fresh snack.

🌿 Basic recipe for couscous salad

Ingredients (serves 4)

• 200 g couscous

• 250 ml boiling water or vegetable stock

• 2 tablespoons olive oil

• 1 lemon (juice and grated zest)

• 1 red pepper (diced)

• 1 cucumber (diced)

• 200 g cherry tomatoes (halved)

• 2 spring onions or half a red onion (finely chopped)

• 1 handful fresh parsley or mint (chopped)

• Salt and pepper to taste

Preparation

Place the couscous in a bowl, pour boiling water or stock over it, cover and leave for 5 minutes to absorb the liquid. Then fluff with a fork. Chop the tomatoes, peppers, cucumber and onion. For the dressing, mix olive oil, lemon juice, zest, salt and pepper.

Mix the couscous with vegetables, herbs and pour over the dressing.

Serve immediately or chilled in the refrigerator.

🌟 Combinations

• With chickpeas – add cooked chickpeas for a more filling meal.

• With roasted vegetables – zucchini, eggplant, peppers and onions, roasted in the oven, give a sweet taste.

• With feta or goat cheese – for a creamy-salty contrast.

• Mediterranean version – add olives, capers and basil.

• Oriental version – season with cumin, coriander and dried fruits (raisins, dried apricots, pomegranate).
