Millet porridge patties
🌾 Millet porridge patties are delicious, nutritious, wholesome and completely vegetarian. You can serve them as a main course or as a side dish to a salad.
🥣 Millet porridge patties
Ingredients (for 12–15 patties)
• 200 g millet porridge
• 1 small onion, finely chopped
• 2 cloves garlic, chopped
• 1 carrot, grated
• 2 tablespoons wholemeal flour or buckwheat flour
• 1 egg (or substitute for a vegan version)
• salt, pepper, paprika powder to taste
• 2 tablespoons olive oil for frying
• optional: fresh herbs (parsley, chives, basil)
Preparation
Cook the millet porridge according to the instructions on the package (usually 15 minutes in lightly salted water), then cool.
In a large bowl, mix the millet porridge, grated carrot, onion, garlic, egg, flour and spices. Add fresh herbs if desired.
Form the mixture into small patties.
Heat the oil over medium heat and fry the patties for 3–4 minutes on each side, until golden brown and crispy.
Serve with vegetable sauce, tomatoes or as an addition to a salad.

• Vegetable: add zucchini, spinach or bell pepper for color and flavor.
• Spiced: curry, cumin or chili for a spicy touch.
• Creamy dressing: serve with tahini sauce, yogurt or tomato sauce.
