Creamy Wild garlic spread with cottage cheese and walnut

Wild garlic spread is one of the best ways to capture the taste of spring in a glass. It is extremely versatile: it is excellent on toasted bread, as an addition to pasta or as a side dish to potatoes in their skins.

Here is a recipe for a creamy and aromatic spread that you can prepare in a few minutes.

This version is fresh, full of protein and just the right amount of spicy thanks to the fresh wild garlic.

 

Ingredients

  • 1 large handful of fresh wild garlic (approx. 50–70 g)
  • 250 g of strained cottage cheese (or Philadelphia-style cream cheese)
  • 2 tablespoons of sour cream or Greek yogurt (for greater spreadability)
  • 30 g of ground or finely chopped walnuts (for texture)
  • 1 tablespoon of olive oil
  • 1 teaspoon of lemon juice
  • salt and freshly ground pepper to taste

 

Preparation process

Preparing the cottage cheese: Wash the cottage cheese thoroughly, dry it and finely chop it. If you want a completely smooth spread, you will later mix it with a hand blender, otherwise chop it by hand for a better structure.

Mixing the base: In a bowl, mix the cottage cheese, sour cream, olive oil and lemon juice. Mix until the mixture is smooth and creamy.

Adding Flavors: Stir in chopped čemaj and walnuts.

Seasoning: Add salt and pepper. Since čemaj has a strong flavor on its own, start with a small amount of salt and taste as you go.

Resting: Refrigerate the spread for at least 30 minutes to allow the flavors to meld and the wild garlic aroma to distribute evenly.

 

Variations for Every Taste

 

Vegan                   Cashews or Tofu Mix soaked cashews with wild garlic, water, and yeast flakes.

Spicy                   Chili Flakes Add a pinch of chili for an extra kick.

Mediterranean     Sun-Dried Tomatoes Stir in finely chopped sun-dried tomatoes in oil.

 

Storage Tips

  • Store the spread in a tightly sealed glass jar in the refrigerator.
  • Use it within 2 to 3 days, as the garlic may change color and become slightly stronger (sharper) in taste after a certain period of time.

 

Warning: Be careful when picking garlic! Always smell the leaves – if they don’t smell like garlic, throw them away, as they could be poisonous lily of the valley or marigold.
