Egg omelet with vegetables

Eggs are an excellent source of protein that keeps your child full for a longer time. Adding vegetables also adds vitamins.

 

  • Ingredients:
  •  2 eggs
  • 1/4 cup chopped vegetables (e.g. spinach, peppers, tomatoes)
  •  1 tablespoon milk
  • a little salt and pepper
  • 1/2 teaspoon butter or oil
  • optional: grated cheese

 

Mix the eggs, milk, salt and pepper in a bowl. Heat the butter in a pan and quickly fry the vegetables in it. Pour the egg mixture over and wait for the omelet to set. Add the cheese, fold the omelet in half and bake for another 1-2 minutes.

 

You can serve the omelet with a piece of wholemeal bread.
