🧁 Spinach muffins

Ingredients (for 12 muffins)

• 200 g fresh spinach (or 150 g frozen, drained)

• 2 eggs

• 100 ml milk

• 80 ml oil (e.g. olive or sunflower)

• 150 g flour (wholegrain or white)

• 1 baking powder

• 50 g grated cheese (e.g. cheddar, parmesan or feta)

• 1 teaspoon salt

• ½ teaspoon pepper

• optional: spices (nutmeg, garlic powder)

Preparation

Preheat the oven to 180°C and line a muffin tin with baking paper.

Wash and roughly chop the fresh spinach. Drain well if frozen.

Mix the eggs, milk and oil in a large bowl.

Mix the dry ingredients: flour, baking powder, salt, pepper and spices if desired in another bowl.

Gradually add the dry ingredients to the liquid, then stir in the spinach and cheese.

Fill the molds to ¾ of the height and bake for 20–25 minutes, until golden brown and slightly puffed.

Leave in the mold for a few minutes, then transfer to a wire rack.

🌟 Combinations:

• With the addition of meat: add pieces of cooked chicken or ham.

• With vegetables: finely chopped zucchini or bell pepper for more color.

• Vegan: use an egg substitute (e.g. chia or flax eggs) and plant-based milk.

• Herbs: parsley, chives, basil for flavor.
