Stewed veal with vegetables
super easy
- 600 g of veal (cut into pieces)
- 1 onion
- 2 cloves of garlic
- 2 carrots
- 2 stalks of celery
- 1 red pepper
- 2 potatoes (optional)
- 1 green zucchini
- 150 ml of white wine (optional)
- 300 ml of beef stock (or water)
- 1 bay leaf
- 1 teaspoon of thyme (or rosemary)
- 2 tablespoons of olive oil
- salt and pepper to taste
- fresh parsley for decoration
Ingredients for the salad:
- 1 head of lettuce or mixed lettuce
- 1 tomato
- 1 cucumber
- 1/2 red onion (optional)
- 1 tablespoon of olive oil
- 1 tablespoon of vinegar or lemon juice
- salt and pepper to taste
Cut the veal into larger pieces, salt and pepper it. Heat the olive oil in a large pan and fry the meat at a high temperature on all sides until it gets a nice golden brown color (about 5-7 minutes). Then the meat is removed from the pan and temporarily placed on a plate.
In the same pan, add finely chopped onion and garlic and fry them until they become soft and fragrant. Then add sliced carrot, celery, pepper, zucchini and, if desired, potatoes. Roast for another 5-7 minutes to soften the vegetables a little.
When the vegetables are lightly browned, add the white wine (optional) and let the alcohol evaporate (about 2-3 minutes). Then return the meat back to the pan and add the soup base. Add bay leaf and thyme (or rosemary). Reduce the heat, cover the pan and simmer on a low temperature for about 1 hour, or until the meat is tender and cooked nicely together with the vegetables. If necessary, add a little more water or stock during cooking.
When the meat is soft, add salt and pepper to taste. Before serving, sprinkle the dish with freshly chopped parsley.
Wash the lettuce thoroughly and drain. Cut the tomato and cucumber into slices, and the onion into thin rings (optional).
In a small cup, mix olive oil, vinegar (or lemon juice), salt and pepper. Pour the dressing over the salad just before serving and mix everything together slightly.
Serve stewed veal with vegetables as a main course, and offer a refreshing salad on the side. For additional freshness, you can decorate the salad with some fresh herbs, such as parsley or basil.
