Tiramisu

Tiramisu is a classic Italian dessert and is known for its rich, creamy layers and coffee flavor.

It is a wonderful dessert that combines the flavors of coffee, mascarpone and cocoa into a creamy, decadent treat. Perfect for any special occasion or as a delicious end to a meal.

 

Ingridients

 

For the coffee mix:

– 1 cup of strong coffee, cooled

-2 tablespoons of rum

 

For the mascarpone mixture:

– 4 large egg yolks

– 1/2 cup of sugar

– 1 cup mascarpone cheese, at room temperature

– 1 cream

– 1 teaspoon of vanilla extract

 

Other:

– 1 packet of savoiardi biscuits

– unsweetened cocoa powder, for sprinkling

– dark chocolate shavings (optional)

 

Instructions:

Prepare the coffee mixture: brew a cup of strong coffee and let it cool to room temperature. Mix a rum into the cooler.

Prepare the mascarpone mixture: in a heatproof bowl, whisk the egg yolks and sugar until well combined. Place the bowl over a pot of simmering water (double boiler method) and stir constantly until the mixture is pale and thick (about 5 minutes). Remove from heat and let cool.

In a separate bowl, beat the mascarpone cheese until smooth. Gently fold the mascarpone into the yolk mixture until well combined.

In another bowl, beat the cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.

 

Assemble the Tiramisu:

Quickly dip each cookie into the coffee mixture, making sure it’s moist but not soggy. Spread a layer of soaked biscuits on the bottom of the dish. Spread half of the mascarpone mixture over the biscuits and smooth the surface with a spatula. Add another layer of soaked cookies on top of the mascarpone mixture. Spread the remaining mascarpone mixture over the second layer of cookies and smooth the surface again.

 

Chill and serve:

Cover the tiramisu and put it in the refrigerator for at least 4 hours, even better overnight, so that the flavors are absorbed and the dessert hardens.  Before serving, dust the top with unsweetened cocoa powder and add chocolate shavings, if desired.

Slice and serve chilled.
