Tortilla with chicken and vegetables

Tortilla with chicken and vegetables is a delicious and simple dish that you can prepare at home.
- 2 tortillas
- 300 g of chicken fillet
- 1 red pepper
- 1 green pepper
- 1 red onion
- 1 handful of corn (optional)
- 2 tablespoons of sour cream or yogurt
- 100 g of grated cheese (gouda or as desired)
- olive oil
- spices: salt, pepper, paprika
Cut the chicken fillet into thin strips or cubes. Season with salt, pepper and paprika. Heat a little olive oil in a pan and fry the chicken until golden brown (about 7-10 minutes).
Cut the pepper and onion into thin strips. In the same pan where you fried the chicken, add a little more oil if necessary, then fry the pepper and onion until soft (about 5 minutes). If desired, you can also add corn.
Lightly warm the tortillas in a pan or in the microwave until they are soft. Spread a spoonful of sour cream or yogurt on each tortilla, then add fried chicken and vegetables. Sprinkle grated cheese over everything.
We fold the tortilla so that it is nicely “packaged”. You can heat it briefly in a dry pan to melt the cheese and make the tortilla crispy.
You can also add salsa, avocado or fresh salad for extra flavor. Tortillas can be served with a side dish such as rice or potatoes.
