Baked salmon with quinoa and spinach

Baked salmon with quinoa and spinach is a delicious and healthy dish that is easy to prepare.

 

Ingridients:

– 4 salmon fillets

– 1 cup of quinoa

– 2 cups of water or vegetable broth

– 200 g of fresh spinach

– 2 cloves of garlic, chopped

– 1 tablespoon of olive oil

– 1 lemon (juice and peel)

– Salt and pepper to taste

– Fresh herbs (e.g. parsley, dill) for decoration

 

Process:

Salmon

– Heat the oven to 200°C.

– Season the salmon fillets with salt, pepper and lemon zest.

– Place the fillets on a baking sheet lined with baking paper and drizzle with olive oil.

– Bake in the oven for 12-15 minutes until the salmon is cooked through and comes apart easily with a fork.

Quinoa

– Rinse the quinoa under running water.

– Boil water or vegetable broth in a medium-sized pot. Add the quinoa, reduce the heat and cook, covered, for 15 minutes, until the quinoa is tender and all the liquid has been absorbed.

– Remove from the stove and leave covered for another 5 minutes, then mix lightly with a fork.

Spinach

– Heat a tablespoon of olive oil in a large pan.

– Add the chopped garlic and fry for about 30 seconds until fragrant.

– Add fresh spinach and sauté until wilted, about 2-3 minutes. Add salt and pepper if necessary.

 

Arrange the quinoa on the plates as a base. Place the baked salmon on top of the quinoa. Add roasted spinach on the side.

If desired, sprinkle with lemon juice and garnish with fresh herbs.

 

Tips:

For an even richer taste, you can marinate the salmon with a mixture of olive oil, lemon juice, honey and mustard before baking.

For more color and flavor, you can mix roasted vegetables such as red peppers, cherry tomatoes, or zucchini into the quinoa.

It is a nutritious and balanced meal that is rich in protein, fiber and vitamins.
