Chicken fillet with vegetables is a classic and nutritious dish that is easy to prepare.

 

Ingridients:

  • 4 chicken fillets
  • 2 tablespoons of olive oil
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 green pepper, cut into strips
  • 1 medium onion, cut into slices
  • 2 cloves of garlic, chopped
  • 1 zucchini, cut into rings
  • 200 g of cherry tomatoes, halved
  • 1 teaspoon of dry oregano
  • 1 teaspoon of dried basil
  • salt, pepper
  • fresh herbs for decoration (e.g. parsley or basil)

 

Season the chicken fillets with salt and pepper. Heat a tablespoon of olive oil in a large skillet over medium-high heat.

Cook the fillets for 5-6 minutes on each side, until they are golden brown and cooked through. Remove them from the pan and cover with foil to keep warm.

 

Add the remaining tablespoon of olive oil to the same pan. Add the sliced ​​onion and sauté until soft and slightly translucent, about 3 minutes. Add chopped garlic and fry. Add peppers, zucchini and cherry tomatoes. Season with salt, pepper, oregano and basil. Sauté the vegetables until soft, about 5-7 minutes.

Return the chicken fillets to the pan with the vegetables and give them a quick toss to infuse the flavors.

 

You can serve with a side dish such as boiled rice, quinoa or mashed potatoes.
