Refreshing cold soup for warm days
super easy
We need:
- 4 cucumbers (peeled and diced)
- 1 clove of garlic
- 1 avocado
- 1 dl of water
- 2.5 dl of yogurt
- 3 tablespoons of lemon juice
- 2 spring onions
- some mint leaves
- himalayan salt
- pepper
Procedure:
Mix cucumbers, avocado, garlic, yogurt, lemon juice and water in a blender until you get a creamy texture. Add sliced spring onions and a few chopped mint leaves and mix everything again in a blender. Season, add lemon juice and store in the refrigerator.
