Shortcake with sour cherries

Ingridients

  • 250 g of flour
  • 60 g of sugar
  • 160 g of cold butter
  • 1 egg
  • 1 egg yolk
  • a bit of salt

 

Make the dough and leave it overnight (at least I do because it’s much better). The next day, roll it out, put it on baking paper and in a pan. Prick the bottom with a fork in several places, flatten the dough and bake in a preheated oven at 180 C for 10 minutes until it turns golden brown (I always make double the amount of dough).

 

Stuffing

  • sour cherries
  • fresh cheese (quantity as desired)
  • a little sugar

 

Mix the sour cherries and fresh cheese and when the dough is baked, cover it with the filling. Cover the top with new shortcrust pastry and shape as desired.
